Iowa Brewers Union

Advancing the art and science of home brewing in central Iowa

A few months back I brewed an Oatmeal RIS and the efficiency on the new system was so good that I didn't want the extra points going down the drain. I collected the cooled wort in a sanitized plastic bucket and pitched a medley of non-yeast inoculants; Brettanomyces bruxellensis, Brettanomyces lambicus, Pediococcus and another tube of some funkiness I can't recall - maybe some enteric bacteria. I let this mixture stew, uncovered for two weeks at 60F before pitching an old packet of dry yeast. The bucket was then lightly cover with plastic wrap and returned to the dark depths of my cellar.

Well, is been a few months now and I took a peak at activity in the bucket. There appears to have been a high krausen and now a white, leathery film has begun to cover the top of the "beer". So thinking like a Flemish brewer, I made an attempt to stir this film back into the beer but it would not break up so it was removed and discarded. The project was returned to the cellar. The film looked like mold to me but I am hoping one of you micro-biologist types would have a better prediction.

The beer is black and the film is white ....

Fun times!

Have you tasted it yet?  What does it smell like?
That really does look like mold growth, especially how it spreads out like when water begins to freeze. cant really help you here though haha, keep us posted on your findings though
This is interesting because I'm right in the middle of studying this stuff. I'm learning about Fungi/Molds being forms of bacteria, along with other forms of bacteria. I don't know exactly what kind of mold that is... but it's mold.  And to be honest I wouldn't drink it because some of that stuff can produce mycrotoxins which can mess you up pretty good. It could even be carcinogenic! I'd drink it at your own risk.
I would agree, that really looks like mold to me.  I would even be concerned about breathing it, the spores can cause respritory irritation or even infection.
